Meat Processing (Abattoirs) – Certificate II
This course is for workers commencing work in an abattoir. Career opportunities with this qualification are: stockyard or lairage labourer, slaughter floor labourer, carcase trimmer, packer, loadout operator, skin shed labourer, fellmongerer, meat processing cleaner, field harvester of wild game, livestock handler in lairage.

Trainees will learn to maintain personal equipment, practice safe and hygienic work policies and procedures, apply quality assurance procedures in the workplace, overview the meat industry and separate offal, process and wash heads and prepare and trim carcasses in the Meat Processing sector of the meat industry.
Career opportunities include stockyard or lairage labourer, slaughter floor labourer, carcase trimmer, packer, offal room labourer, tripe room labourer, loadout operator, skin shed labourer, fellmongerer, by-products labourer, meat processing cleaner, field harvester of wild game and livestock handler in lairage.
Outcome on completion of HSC
- Certificate II in Meat Processing (Abattoirs) AMP20316 in AMP Australian Meat Processing Training Package.
- Pathway into an Apprenticeship for Certificate III Meat Processing.
Course delivery
- On the job and off the job and can be delivered face-to-face, flexibly or mixed mode.
- The SBT term is calculated in months from the date of commencement to 31 December of the HSC year.
Commitment required
- Undertake a minimum of 100 days in paid employment and training.
- Undertake Certificate II Meat Processing (Abattoirs) as part of your HSC.
- The employment and training can be undertaken during school time, after school and during school holidays.
How will you be assessed?
- Both on the job and off the job through written tests, project work and practical exercises.
