- Blend flour, salt, olive oil and eggs to a crumb.
- Turn out onto a benchtop and knead until smooth.
- Rest the dough for 20 minutes.
- Knead again.
- Take a nugget of dough, roll it thin on a flat surface.
- Put baking paper over the dough to stop it sticking if it's a bit wet.
- Roll dough into a green bean shape with your hands.
- Drop into boiling water for 2-3 minutes at most.
- Drain and serve or use for carbonara.

Pasta
Ingredients
- 200 grams flour
- Pinch of salt
- Dash of olive oil
- 2 whole eggs
Procedure

- Turn out onto a benchtop and knead until smooth.
- Rest the dough for 20 minutes.
- Knead again.
- Use a pasta machine to roll out the dough until thin.
- Trim to a manageable length
- Use the pasta machine to cut the dough into a shape of your choice.
- Drop into boiling water for 2-3 minutes at most.
- Drain and serve or use for carbonara.
Carbonara
Ingredients
- Grated cheese (pecorino, parmesan or tasty – double the amount of eggs)
- Chives
- Black pepper
- 5 eggs
- Bacon
- Other toppings as desired such as
- spinach
- broccoli
- green beans
- spring onions.
Procedure
- Mix together eggs and cheese in a bowl until smooth.
- Dice and fry the bacon or any other toppings.
- Boil pasta.
- Drain pasta and add a small amount of the egg mixture to the warm pot.
- Stir in the pasta and add in the remaining egg mixture.
- Top with grated cheese, chives and other toppings of your choice to serve.
Tip
If you don't eat bacon, try replacing it with corn.
Chocolate mousse
Ingredients
- 150g dark chocolate
- Pinch of salt
- Sugar
- 5 eggs
- 40g butter
Procedure
- Separate the egg whites and yolks.
- Break the chocolate in the bowl.
- Melt the chocolate in a double boiler (a bowl over a pan of boiling water).
- Add butter and combine until glossy.
- Mix egg white and salt until they foam.
- Add sugar into the egg whites until the mix forms hard peaks.
- Once the chocolate mix has cooled a little, add the egg yolks.
- Add half egg whites to the chocolate, and mix well.
- Gently fold in the remaining egg whites to the chocolate mixture.
- Garnish with grated chocolate.
- Store in the fridge until set.
